-1⁄2 cup julienned daikon radish
-1⁄4 cup nuoc mam (Vietnamese fish sauce)
-1⁄4 cup rice vinegar
-1 tablespoon sugar
-2 cloves garlic, minced
-1⁄4 teaspoon black pepper
-24 (6 inch) rice paper wrappers
-2 cups Bean sprouts
-2 green onions, thinly sliced


1. In a large bowl, combine ground pork, onion, garlic, and black pepper. Mix well and set aside.

2. In a small bowl, combine pineapple chunks, brown sugar, soy sauce, cider vinegar, vegetable oil, and salt. Mix well and set aside.

3. In another small bowl, combine shredded iceberg lettuce, cilantro, peanuts, carrot, daikon radish, nuoc mam, rice vinegar, sugar, garlic, and black pepper. Mix well and set aside.

4. Soak rice paper wrappers in warm water for about 30 seconds.

5. Lay wrapper flat on a work surface.

6. Place 2 tablespoons of the pork mixture in the center of the wrapper.

7. Top with 1 tablespoon of the pineapple mixture and 1 tablespoon of the lettuce mixture.

8. Fold the bottom of the wrapper up over the filling.

9. Fold the sides of the wrapper in toward the center.

10. Roll the wrapper up from the bottom, making sure it is snug around the filling.

11. Repeat with the remaining wrappers and filling.

12. Serve immediately or store in an airtight container in the refrigerator for up to 2 hours.
