-1 breadfruit
-2 tablespoons olive oil
-1 onion, diced

-1/4 cup white vinegar
-1/4 cup fresh parsley, chopped

Instructions:

2. In a large pot, boil saltfish in water for about 10 minutes. Drain and flake fish with a fork.
3. Pierce breadfruit several times with a fork. Bake in preheated oven for about 45 minutes, or until fork tender.
4. In a large skillet, heat olive oil over medium heat. Add onion, bell pepper, garlic, thyme, and black pepper. Cook until vegetables are softened, about 5 minutes.
5. Add flaked saltfish and breadfruit to the skillet. Stir in water, vinegar, parsley, cilantro, and lime juice. Cook until heated through, about 5 minutes.
6. Serve with lime wedges and hot sauce, if desired.
