Ingredients:

1 pound ground pork

1/2 cup uncooked long-grain rice

1/4 cup finely chopped onion

2 tablespoons soy sauce

1 tablespoon vegetable oil

1 teaspoon curry powder

1/4 teaspoon ground black pepper

2 cups chicken broth

1 (14.5 ounce) can diced tomatoes, undrained

1/4 cup chopped fresh cilantro

Instructions:

1. In a large saucepan, cook the pork, rice, onion, soy sauce, oil, curry powder, and pepper over medium heat until the pork is no longer pink.

2. Add the chicken broth and tomatoes. Bring to a boil, reduce the heat to low, and simmer for 30 minutes.

3. Stir in the cilantro and serve.
