Instructions:
1. In a large bowl, combine ground pork, onion, garlic, black pepper, fish sauce, oyster sauce, soy sauce, sugar, and water. Mix well and set aside.
2. In a small skillet, toast star anise over medium heat until fragrant. Remove from heat and let cool.
3. In a large frying pan or wok, heat 1 tablespoon of oil over medium-high heat. Add the pork mixture and cook until browned, about 5 minutes.
4. Remove from heat and let cool slightly. Stir in toasted star anise.
5. To assemble, place a small handful of shredded lettuce on each of 8 plates. Top with cilantro, mint, Thai basil, pork mixture, peanuts, fried shallots, pickled carrots and daikon, and a lime wedge. Serve with fresh chili peppers, if desired.
